We had soba making class this morning, everything made from scratch. Buckwheats were from hokkaido but sensei grounded them with stone (not machine) himself for flour. Here, my soba is 80% buckwheat and 20% plain flour with 45% water. Just 3 simple ingredients. The process was rather intimidating. It looked really difficult. I thought i wouldn't be able to manage but i did. Woot. Sensei was especially proud of the thickness of my soba. 'Matchstick size-se', he said. 'Good!'. Wheeee!! 😄
